I first made this dish back in October, it was my first entry. I remade it tonight but made a few changes. I thinly sliced the bell peppers instead of dicing which I liked a lot better. I made a few other tweaks as well. Hubby exclaimed how good it was after each of the first three bites.

6 ounces penne pasta
2 boneless, skinless chicken breast halves, sliced into thin strips
1-2 teaspoons Cajun seasoning (I use Tony Cachere’s)
1 tablespoon olive oil
1 green bell pepper, thinly sliced
1 red bell pepper, thinly sliced
1 green onion, minced
1 1/2 cups heavy cream (or a combination of milk & cream)
1 teaspoon dried basil
1/4 teaspoon lemon pepper
1/8 teaspoon garlic powder
ground black pepper to taste
1/2 cup shredded Italian Cheese Blend
2 tablespoons grated Parmesan cheese (optional)
Bring a large pot of lightly salted water to a boil. Add penne pasta, and cook for 8 to 10 minutes, or until al dente; drain. Meanwhile, place chicken and Cajun seasoning in a bowl, and toss to coat.
In a large skillet over medium heat, saute chicken in olive oil until no longer pink and juices run clear, about 5 to 7 minutes. Add green and red bell peppers onions; cook for 2 to 3 minutes. Reduce heat, and stir in heavy cream. Season the sauce with basil, lemon pepper, salt, garlic powder and ground black pepper, and heat through. Add Italian cheese blend. Simmer. In a large bowl, toss penne with sauce. Sprinkle with grated Parmesan cheese.

I made this recipe tonight and it was AMAZING!!!! I was skeptical starting out, but it was incredible. I thought there was no way this could be done in 30 minutes, but it was. Well, it took me an hour only because i had to run to the grocery store to pick up an ingredient. But, it this recipe has easy set up and is pretty low maintenence. The aroma is to die for when you cook it! Plus, it is very attractive with all the colors involved in the dish. Sooooo tasty, my husband was so impressed that he wants me to make it for his Mom who is the ultimate cook! Ashley, excellent recipe to start your Cooking with Love blog. I give this one 4.5 stars.
