A decided to do some baking today and wanted something chocolatey. So here they are, Rocky Road Bars. I used chocolate graham crackers for the crust (actually teddy grahams since they didn’t have regular grahams). You could easily sub the chocolate chips for peanut butter chocolates, etc. This recipe is so versatile, use regular graham crackers or chocolate ones; change up the nuts and/or use crushed candy to make your own creations. Yummy. I wasn’t sure what to call them but hubby thought they tasted like Smores, so that was that! Hope you enjoy!

Smores Bars
1 stick margarine
2 cups chocolate graham cracker crumbs
1 1/2 cups flaked coconut
1/2 – 1 cups chopped walnuts (if desired)
1/2 cup semisweet chocolate chips
1 1/2 cups miniature marshmallows
1 (14 ounce) can sweetened condensed milk
1/4 cup semisweet chocolate chips, melted
1-2 Tbsp milk
Preheat oven to 350 degrees. In a 9 x 13 inch baking pan combine melted butter and graham cracker crumbs. Mix together and press evenly onto bottom of the pan. Layer coconut, 1/2 c. chocolate chips, marshmallows & walnuts over crust. Drizzle the condensed milk evenly over ingredients. Bake for 30 minutes or until marshmallows are golden brown.
Melt 1/4 c. chocolate chips and add milk until creamy (i did so in the microwave to save time, but if you melt in a bowl over hot water you shouldn’t need milk at all). Drizzle bars with melted chocolate. Cool completely and cut into squares.
