Garlic Chicken Pizza

I had some roasted chicken leftover in the fridge and decided to make pizza. It was absolutely delicious!! I can’t wait to make this again. Next time I’ll try making it on the grill! Yum.

Garlic Chicken Pizza

Pizza crust dough
1/2 medium onion, sliced into 1/4 inch slices
1 Tbsp olive oil
1 Tbsp butter
3/4 c. heavy cream
1/2 tsp. garlic powder
1/2 head roasted garlic (add more or less to taste)
1/2 Tbsp. basil
1/2 Tbsp. parsley
6 oz. mozzarella cheese
1/4 c. Parmesan cheese
1/2 – 1 cup roasted chicken, chopped

Caramelize the onions: Combine olive oil, butter and sliced onions in a skillet over medium-low heat. Cook slowly until onions are a caramel color, stirring occassionally, for about 30-40 minutes. Once onions are complete, remove onions from skillet reserving any excess oil. Add heavy cream & garlic powder. Cook over medium-low heat, stirring occassionally until sauce thickens. Set aside.

Cook pizza crust per instructions. Assemble pizza: sauce, mozzarella cheese, basil, parsley, chicken, minced roasted garlic and carmelized onions. Continue to bake pizza per dough instructions.
