I’m a hopeless chocolate fiend, but during the holidays I do spice it up a bit with more than just chocolate. I’ve never made Molasses cookies until today, and they were delicious! I’ll definitely be incorporating these into the usual holiday cookie rotation. Yum!
Molasses Cookies
3/4 c (1 1/2 sticks) unsalted butter
1 c packed brown sugar
2 c all-purpose flour, sifted
1/2 tsp salt
2 tsp ground cinnamon
1 tsp ground cloves
1 tsp ground ginger
1 large egg
1/4 c molasses
1 tsp baking soda
turbinado sugar (or granulated)
Beat butter and brown sugar in large bowl until light and fluffy. Add remaining ingredients (except for turbinado sugar), and beat until well blended. The dough will be soft so refrigerate until firm enough to handle, at least 2 hours.
Preheat oven to 350°F. Line 2 cookie sheets with parchment paper. Shape dough into 1-inch balls and roll in turbinado sugar. Place on cookies sheets 2 inches apart. Bake 1 sheet at a time, until firm, about 8 minutes. Let stand briefly then remove to a rack to cool.

Gorgeous! I have never had molasses cookies, but I’ll try most things once, especially when they look this good. Love the ribbon too!
