Happy new year! Post Christmas sales = inexpensive candy = M&M cookies :-) I hit up Target the day after Christmas and got myself a $0.64 bag (or two) of M&Ms in preparation of my sister in law’s visit, so she’d have something to take back to school with her. I’ve actually never made M&M cookies before so I went to my bookshelf and knew exactly which cookbook to turn to… my brand new copy of The Cookie Bible. They came out wonderfully! The original recipe actually called for Hershey’s Holiday Bits, which I have no idea what they are… but they looked like M&Ms in the picture so the M&Ms were an appropriate substitute. And if this recipe is any indication of the rest of the cookbook, well then I’m in trouble… my waistline isn’t going to appreciate this cookbook! ;-)

M&M Cookies

2 c all-purpose flour
1/2 tsp baking soda
1/4 tsp salt
1/2 c butter, softened
3/4 c packed light brown sugar
1/2 c granulated sugar
1 tsp vanilla extract
2 eggs
1 1/3 c M&M’s, divided
1 c chopped pecans

Heat oven to 350°F. Stir together flour, baking soda and salt; set aside. Beat butter, brown sugar, granulated sugar and vanilla in a large bowl until well blended. Add eggs; beat well. Gradually add flour mixture, beating until well blended. Stir in 3/4 cup M&Ms and all the nuts. Drop by rounded teaspoons onto cookie sheet. Press 5-6 of remaining M&Ms on each cookie before baking.

Bake 9-11 minutes or until lightly browned. Cool slightly; remove from cookie sheet to wire rack. Cool completely. Yields about 3-3 1/2 dozen cookies.

Yum! I have so many leftover baking items I need to use up, chips, nuts, coconut. I’m going to start baking up cookies for dh to take to work soon so I can clear out my pantry! I’ve never baked with M&Ms before, not sure why. Maybe I’ll get some pink ones for v-day :)
