Happy New Year! Can you believe its already 2008?! This year has flown by! As we look forward into 2008 and all that it awaits us, I wanted to take a moment to look back and highlight a few of our favorite recipes from 2007; some are old family favorites and some are all new recipes. They were all huge hits and definitely keeper recipes. Enjoy!
Favorite Appetizer
Hot Spinach Dip
I made this recipe again two nights ago, and it was even better than I remembered it. It was a huge hit with our guests as well.
Favorite Chicken Dish
Creamy Green Chile Chicken Enchiladas
I know these aren’t the prettiest looking things. But boy are they delicious. I get lots of compliments on these, and the best part is that its really easy to fix!
Favorite Seafood Dish
Salmon & Asparagus Pasta
This recipe was probably the single greatest creation of 2007. It was a huge hit with hubby, who won’t even normally eat asparagus. Its got such a wonderful fresh taste. The cream sauce isn’t overbearing so it still feels nice and light.

Favorite Beef Dish
Cheesy Stuffed Shells
This category required no thought what so ever. My husband raves about these. He makes ‘mmmm’ noises every single time. The leftovers are delicious. Its easy to make in advance and freeze so its a wonderful week night meal. What more could you ask for?
Favorite Side Dish
Green Chile Rice
Yes, another dish involving green chiles (I’ve said it time & time again, We love green chiles!). How can you go wrong with cheesy rice?
Favorite Dessert
Texas Sheet Cake
This was by far the hardest decision. I had lots of chocolate desserts to chose from, but in the end the Texan girl in me had to go with Texas Sheet Cake.
