
Don’t you just love holiday baking? Your waistline may not but the taste buds certainly do! I’ve started the massive undertaking called holiday baking. I managed to do about 17 dozen cookies this weekend! So stay tuned all week long for new cookie recipe!
This recipe is one that I’ve had saved since last Christmas and finally made them! They taste very much like an airy shortbread with little hints of chocolate. I preferred them without the chocolate drizzle while hubby preferred them with, so definitely try them both ways. They’re not overly sweet without the drizzle which is why I really like them!
Chocolate Chip Tea Cookies
2 c all-purpose flour
2 sticks unsalted butter
½ c powdered sugar, sifted
1 tsp vanilla extract
1-½ c miniature chocolate chips, divided
Preheat oven to 350°. Beat butter and sugar with an electric mixer until fluffy. Add vanilla and mix well. Gradually add flour. Stir in 1 cup miniature chocolate chips.
Shape into 1” balls and place 2 inches apart on an ungreased cookie sheet. Bake 10-12 minutes. Remove to wire rack to cool.
Place ½ cup miniature chocolate chips in a sealed plastic bag (use a heavy duty ziploc type bag) and microwave until melted; about 30 seconds. Snip off a small corner of the bag and drizzle chocolate on top of cold cookies. Chill for 5 minutes or until chocolate is set. Store at room temperature.

These look absolutely fabulous! And the funny part is my husband thinks so too! I was looking at them in my GR and my husband asks excitedly “Are you making THOSE!?!” Um, I wasn’t planning on it, honey. And…cue the pouting. So I guess I’ll have to add them to my list! lol!
