Thumbprint Cookies

Last weekend I started putting together Christmas packages. I finished Round 1 of my baking which included almost 20 dozen cookies. I wanted to try some new recipes out and they all turned out to be hits! I tend to make all baked goods with chocolate. I am a chocolate fiend. But its the holidays and these were all getting shipped out of the house so it was time to try some  non-chocolate varieties. I really wanted to try some with fruit cause I knew our Moms would love them.


Little did I realize how much we were going to love these. Of the cookies I baked, hubby thought these might just be the best! They were buttery and sweet but not too sweet. The coconut gave the cookie a little bit of crunch but the cookie was nice and soft with the little bit of Cherry jam. Perfect! These were a huge hit and will definitely be in the rotation for years to come!

Jam Thumbprint Cookies
Yields: 32 cookies

3 sticks unsalted butter, at room temperature
1 c granulated sugar
1 tsp pure vanilla extract
3 1/2 c all-purpose flour
1/4 tsp kosher salt
1 egg beaten with 1 Tbsp water, for egg wash
7 ounces sweetened flaked coconut
Jam (I used Organic Cherry)

Preheat the oven to 350°. In an electric mixer fitted with the paddle attachment, cream together the butter and sugar until they are just combined and then add the vanilla. Separately, sift together the flour and salt. With the mixer on low speed, add the flour mixture to the creamed butter and sugar. Mix until the dough starts to come together. Dump on a floured board and roll together into a flat disk. Wrap in plastic and chill for 30 minutes.

Roll the dough into 1 1/4-inch balls. (If you have a scale they should each weigh 1 ounce.) Dip each ball into the egg wash and then roll it in coconut. Place the balls on an ungreased cookie sheet and press a light indentation into the top of each with your finger. Drop 1/4 teaspoon of jam into each indentation. Bake for 20 to 25 minutes, until the coconut is a golden brown. Cool and serve.

These look so great! I actually avoided them for the holidays just because most recipes I had seen have nuts (and I am already doing nuts in a few other things) but I will definitely be bookmarking this recipe to make for myself post holiday :)

ohhh i love thumbprint cookies, but have never thought to use coconut with them!!!
