Hi. My name is ashley. I am a cookbook addict. I have a problem — a constantly growing collection of cookbooks; the majority of which I haven’t made a single recipe from. Great Coffee Cakes, Sticky Buns, Muffins & More by Carole Walter is the perfect example. I still remember when Cream Puffs in Venice wrote about this cookbook back in ’07. I got it shortly after. Here we are a later and I’m just now finally trying a recipe from the cookbook! Pathetic! I need to start using my cookbooks! I have tons of fabulous cookbooks that I have yet to try recipes from. I need to follow Deborah’s example and start cooking from one book monthly!
I was dying for some homemade baked goodness so grabbed this cookbook (finally!). Carole’s recipe for Favorite Vanilla Muffins stood out. I had everything in the kitchen… so I was set to go. I whipped these up and oh my goodness. Talk about heaven in a muffin. They had a nice vanilla flavor and there was just a little bit of chocolate… heaven I tell you! I can’t wait to make these again! Hubby even went so far as declaring them the best ever muffins. These Vanilla Chocolate Chunk Muffins were a little more cupcake-ish to me than the traditional muffin. They were very airy and perhaps the stronger vanilla flavor made me think of white cake. A special treat for breakfast or a snack with a glass of milk!
I can’t wait to try out more recipes from Carole’s collection! Even if you don’t have her cookbook, you can pick up a few recipes here at her site!
Vanilla Chocolate Chunk Muffins
vanilla sugar for dusting
Preheat the oven to 350°F. Line a standard 12-cup muffin pan with liners.
In a bowl, whisk together the flour, baking powder, salt and baking soda. Set aside. Using the paddle attachment of your mixer, cream the butter and vanilla together for about a minute. Gradually add in the sugar, then mix for an additional minute. Scrape down the sides of the bowl. Blend in the eggs, one at a time, then mix for another minute. With the mixer on low, stir in about half the flour mixture, then the sour cream, then the remaining flour mixture. Gently stir in the chocolate chunks.
Portion the batter into the prepared pan. Bake for 23 – 25 minutes, or until the muffins are golden brown and the tops are springy to the touch. Let the muffins cool in the pan for about 5 minutes, then remove from the pan and place on a rack to cool further.

All I need to pick up is some chocolate (I know, crazy I don’t have any on hand!) and I want to try these! Do you think that using plain yogurt instead of sour cream might be fine? I have some to use up.
bri – i think the yogurt would work too! my usual muffin recipe uses yogurt and i love it!

Those look and sound delicious! I think I have all the ingredients as well, so I may have to try them! I’m trying to use up some things in the kitchen anyway…moving is a good excuse to use up all those things!

These look so good! Carole teaches classes in the area and I have been to her Soups and Breads one – I learned a lot! Although she is sick with MS so she has some trouble getting around so she has a lot of assistants.
