I absolutely love muffins for breakfast. They’re perfect to whip up on the weekend to keep through the week. A good muffin and a piece of fruit and I’m a happy camper in the morning! I love making banana muffins cause I’m not big on bananas even though they’re good for you, but put them in a muffin and I love them! So I frequently make banana muffins. I went to make my usual banana nut muffins but remembered a recipe for Chocolate Chip Coffee Cake which Chelle & Annie made awhile back. Its been on my list of things to try but haven’t gotten around to it yet. It was my inspiration for these banana chocolate crumb muffins! These are perfect for breakfast or for a sweet little snack! Go whip up a batch right now… seriously, I’ve eaten three since I made these a few hours ago ;-) Shhhh…..

Banana Chocolate Crumb Muffins

3-4 bananas, mashed
1/4 c melted butter
1 1/2 c all-purpose flour (can sub 3/4 – 1 c all-purpose for wheat pastry flour)
1 tsp baking soda
1 tsp baking powder
1/2 tsp kosher salt
1/3 c granulated sugar
1 large egg
1 tsp pure vanilla extract

Crumb Topping:
3 Tbsp brown sugar
1 Tbsp all-purpose flour
1/2 c mini chocolate chips
1 tablespoon butter

Preheat the oven to 350°F.  Grease or line muffin tin with liners. In a large mixing bowl using a wooden spoon, mix butter and mashed bananas. Mix in granulated sugar, egg & vanilla. Sprinkle baking soda, baking powder and salt over the mixture. Add the flour, mix until just incorporated. Spoon batter into prepared muffin cups.

In a small bowl, mix together brown sugar & 1 Tbsp all-purpose flour. Cut in 1 tablespoon butter until mixture resembles coarse cornmeal. Stir in mini chocolate chips. Sprinkle topping over muffins.

Bake in preheated oven 20-25  minutes, until a toothpick inserted into center of a muffin comes out clean.

This has been on my list of things to make for a long time. I really like the muffin idea and I think I might have to go that route :) These look delicious!

I had a hankering for some banana muffins, guess it was the smell of those oh so ripe bananas in my kitchen, so I checked out your blog and wasn’t let down. I made my muffins exactly as directed except I omited the choc chips and sprinkled turbinado sugar on top. Yum!!!!! Thanks for the recipe.
