This recipe is something I’ve been eating as long as I can remember. Its nothing fancy, and quite frankly doesn’t even look too fabulous. But oh are they delicious! My mom made these a lot for us as kids cause they were super easy to prep on the weekend and stash in the fridge. I still make them the same way. I make a batch or two at a time and stock the fridge/freezer. Wrap them up individually and they’re super easy to grab as you run out the door in the morning. Or perfect for a quick & easy dinner alongside a salad. They’re also a super cheap meal when you’re strapped for cash (60-70 cents a burrito)!
My mom has always used Ranch Style Beans so that’s what I do. Don’t know what Ranch Style Beans are? You’re definitely not from Texas then
If you can get ahold of them definitely give them a try! I’m sure you could probably sub regular old beans considering the fact that I drain & rinse them off. But I do think they have a little more flavor even when drained/rinsed than regular pinto beans.
Anyway – I figured I’d share this super simple recipe with you guys cause its nothing glamorous but one of our standbys! These also freeze pretty well. I wrap them individually before throwing them in the freezer. To eat them, I take them straight from the freezer and microwave!
Beefier Bean & Cheese Burritos
1 lb. lean ground beef
1 packet taco seasoning
1 cup water
4 cans Ranch Style Beans, drained & rinsed*
1 can diced Hatch green chiles
10 Kraft Single Slices, or shredded cheese as desired
20 fresh flour/wheat tortillas
Saute ground beef in a large skillet until browned. Drain grease. Add taco seasoning, green chiles and 1 cup of water. Simmer until water has evaporated. Add drained & rinsed Ranch Style beans. Simmer 10-15 minutes. Partially mash using a potato masher until desired consistency achieved. If using shredded cheese, mix in cheese until desired cheesy consistency.
Fill each tortilla with a heaping 1/4 cup of beef/bean mixture. Top with 1/2 slice of cheese. Fold tortilla.

Looks fab but I’m thinking this isn’t a meal to eat when you’re wearing your favourite gown – could be messy! Love how economical this recipe is, too!

I made a similar version of these last night, based on your recommendation! I used black beans but didn’t mash them + half a jar of salsa – chiles (didn’t have any). I had two for lunch today, and they were very good. Now I just need to keep myself from eating the rest out of the freezer right away. ha!
