I blogged recently about some super tasty Italian Shredded Beef Sandwiches. We love them but a 4 lb roast makes a lot of shredded beef for two people! After a few sandwiches, I’m ready for something else! I’ve been experimenting with the leftover beef and this one has quickly become a favorite. I’ve made it several times now and its a winner. Ridiculously quick & easy since the beef is already made.
Of course you can add veggies, I’ve tried peas & broccoli but neither were quite right for us. We usually leave it as a simple meat & potatoes dish and serve it up with some salad. Or if I’m particularly lazy then no veggies will be found anywhere in sight
Shredded Beef & Gnocchi
1 – 1.5 cups Italian shredded beef, warmed
~ 1 pound gnocchi (shelf stable or fresh)
2 Tbsp unsalted butter
olive oil (optional)
salt & pepper
splash of cream (optional)
freshly grated parmesan cheese (optional)
Cook the gnocchi according to the package directions. Drain them & return to pot.
Heat a couple tablespoons of butter (or olive oil or combination of butter/oil) in a large skillet over medium-high heat. Add the gnocchi in a single layer and toss to coat with the butter. Cook until gnocchi are golden brown on the bottoms. Use a spatula to flip the gnocchi. Cook until they are golden & crisp all over. Season with salt & pepper.
Add shredded beef and toss. Add a splash of cream if desired (or more. If I have cream around I use 2-3 tablespoons). Remove from heat & add parmesan cheese if desired.

That looks WONDERFUL!
Mmm, this post makes me hungry for gnocchi. It looks so rustic and hearty.
Oh my! Thank you!! I slow braised two roasts yesterday for myself, my husband, and younger brother. I am 34 weeks pregnant, so I have cooking “double meals” lately. I was able to make the beef with gnocchi (I added the roasted onions, and soft roasted carrots from the braising liquid!), and was even able to make beef stroganoff! Your dish looks yummy! I think I’m going to put a photo on the blog and link your recipe to it!
I added a link to your site and this recipe on my blog: http://cupcakesandbakes.wordpress.com/2012/05/07/98/
Thank you for your inspiration!
