February 22, 2010

I’ve already blogged about Roasted Tomato Salsa before. That recipe is still our favorite. But I wanted to give this recipe a try since its faster to whip up and we love us some good roasted salsa goodness. We really enjoyed this salsa when served on day 1, but the roasty goodness was actually too [...]

Sorry guys, I kinda dropped of the face of the planet again. I’ve been busy this month! We just got back from 8 days in Colorado for vacation! Homemade Light Ranch Dressing

July 29, 2009

I’ve never made my own dressing. I’ve always wanted to but have just never got around to it. Until recently that is. A few weeks ago I was contacted by the folks at Stonyfield Farms asking if I’d be interested in trying some of their new Greek Yogurt line, Oikos. I’ve been using Stonyfield for [...]

Lettuce Wraps

July 27, 2009

Since starting weight watchers, we’ve eliminated a lot of carbs from our diet. I don’t think I really realized just quite how many carbs we were consuming. Oh I’ve always known I was a carb lover and don’t get me wrong, I don’t think there is anything “wrong” with carbs but like most things in [...]

Parsley Grilled Chicken

July 8, 2009

I mentioned in a recent post that I started weight watchers. I’ve been “trying” to lose weight for the last year or so…. counting calories off and on, “going” to the gym. Whatever it was that I was doing was failing. More like the lack of what I was doing. I finally had the last [...]

Roasted Tomato Salsa

June 24, 2009

You don’t know how excited I am to be posting this… I have been trying to make salsa for years. Most of the time the flavor was so intolerable we’d throw out the entire batch. My cousins who are all college students make fun of me cause they say salsa is so easy that they [...]

Lately I have been nothing but lazy when it comes to cooking. Work has been absolutely exhausting, I worked a 12 hour day yesterday so cooking has been the last thing on my mind. But I miss it. And I miss blogging so I’m hoping to resolve that soon! But for now, I bring you [...]

Bacon Appetizer Crescents

August 23, 2008

I remember seeing this recipe hit the blogosphere months ago, maybe around the superbowl? I actually tried this recipe about two months ago for game night with friends but never got around to writing it up. Now that I’m preparing and planning the menu for our next game night in a few weeks, I remembered [...]

Homemade Croutons

August 4, 2008

The other night I went to make us salads with dinner and realized we didn’t have croutons in the pantry. I don’t do salad without croutons… they’re the best part! So I thought I’d finally take time to make some especially since I had some great ciabatta bread in the pantry that we hadn’t used [...]

Bruschetta with Tomato & Basil

March 2, 2008

I confess, until a couple months ago I thought Bruschetta was the combination of toasted baguettes with the tomato & basil topping. I mean when you go to an Italian restaurant it typically says Bruschetta, and what do you get?? The following! But Bruschetta (pronounced brusketta) actually refers to the garlic toasts! So now that [...]

Roasted Red Pepper Dip

February 4, 2008

I never realized how much dairy we consume until I went to make vegan superbowl dishes … I had the hardest time coming up with dishes particularly cause everything seemed to involve, especially anything hubby would normally want to eat! I was reminded of Red Pepper dip which was delicious and vegan friendly, and the [...]

Hot Spinach Dip

October 10, 2007

I’ve been craving spinach dip so decided to whip up a batch as a little appetizer before dinner tonight. I definitely prefer hot spinach dips over the cold, which is what I’ve always made in the past. I’m not a big fan of all the mayo and sour cream in the cold dips. [...]

“Fried” Ravioli

June 22, 2007

One of our favorite little Italian places has this fabulous jalapeno ravioli. I’ve been craving it but I’ve been trying to avoid eating out. I decide to try making some spicy ravioli using store bought cheese ravioli. I used whole wheat Butioni ravioli, accompanied by homemade marinara for dipping. Yummy!

“Fried” Ravioli
9 ounces Cheese Ravioli, [...]
